I use Futo keyboard. It has dedicated undo/redo button (if you turn-on the function row)

I'm not sure, but it does have its own algorithm for swipe and things like that, with it's own library from what I understand
Probably because it uses nothing online, including the voice to text. It's only local device. A rare claim for those kinds of features.
I can recommend AnySoftKeyboard, it's FOSS and very customizable. If you swipe up from the space bar, you get additional options.

To my knowledge, every single one. It's called the Backspace Key.

You don't, or at least I never have. Once it's gone, it's just gone.
